La bodegua

our vineyard is located in Georgia, in kakheti-village shilda, in kindzmarauli micro zone, 550 meters above sea level. the terroir consists of unique sameravi veriety vine, which is maintained by bio and bio dinadynamic methods. that allows us to get  red dry saperavi. 

Las viñas

Saperavi produces an extractive wine with a characteristic bouquet, a harmonious taste, and pleasant astringency. Its alcoholic strength ranges from 10.5 to 12.5% and titrated acidity from 5 to 7%. Saperavi grapes produce very deep red wines that are suitable for extended aging. It has the potential to produce high alcohol levels, and is often blended with lighter varieties. It is by far the most dominant Georgian red grape in terms of overall production.
the name saperavi refers to the characteristic of the veriety and is derived from the fact that its grains contain a lot of colouring substances.

Vinificación

In our cellar saperavi is made from traditioal Georgian method. The wine-making process involves pressing the grapes and then pouring the juice, grape skins, stalks and pips into the Qvevri, which is sealed and buried in the ground so that the wine can ferment for five to six months before being drunk.  during the process of winemaking supplements are not used, including sulfur dioxide. the wine is not filtered. the aging process takes place with minimal intervention.

Los vinos

Saperavi, made from organically grown grapes, is characterized by a pleasant scent, floral aromas and tannins characteristic of qvevri wine.  does not contain antioxidant-sulfur dioxide. It is characterized by a dark garnet color. Harmonious on the palate, full, velvety, refined, with fruity tones and varietal aroma. Goes well with meat, fish and salads.
