Le domaine

As even our ancestors were vine-growers, we have decided to introduce ourselves and our wines to the world under a brand name that represents our family coat of arms. Originating from the Vosges region in France, the coat of arms dates as far back as the 14th century and has chivalric roots. It was bestowed upon our ancestors in honour of their righteousness and freedoms, and also became the symbol of our family for the same reason. In the period between the last crusades and the demise of the chivalric orders, our ancestors came to Slovenian soil, where they also settled down. My grandfather Franc Šuman dedicated all his life cultivating the vineyards, after that my father Jože Šuman, also me and my wife Simona we followed theirs footsteps and their love upgradet into unconditional love for nature. Me and my wife we are working and living on Šuman domain for 21 years, together with 3 childrens; Tit, Iva and Vitan.
Continuing our Family crest Motto and Tradition since 14.th Century, today we have added love, sensitivity and respect for Nature. In all aspects of growing vine through to bottling wine we use exclusively only natural products, we rely on the Nature’s own power and energy to contribute and honour all Life. That includes all invisible life, that is crucial in the making of wine. Relying only on  pure and natural processes, that existed long before we did, is what makes our wines full of vitality, something that is expressed in its fuller body,stronger charater, rich bouquet and warm colour. Almost all grapes are macerated, the way to get most of it. All wine are aged in wooden casks, and fermented naturally, without adding sulfites or any microorganisms, they are unfiltered.

Les vignes

Our biodynamic vineyards are positioned on the north-east part of Slovenia, in the middle of SREDNJE SLOVENSKE GORICE. The texture of soil and good sites are very important for all products of nature. Geographical they are very agitating and hilly. In this area meets Pannonian and Mediterranean climate, both under the influence of Alpin climate. Woods brooks spreads all over the our country, gives to our wines their freshness, richness and variety. The flour are also very variety; from loamy to very lightly sandstone ones, that is why we possessed different kind and very rich wines. We have 8 different varieties of vines: Pinot Gris, Chardonnay, Sauvignon, Traminer, Muskat Yellow, Riesling, Rheinriesling and Pinot Noire. Our wines are bread in prominent ridge and south sides, what is principal meaning for producing high quality natural wines. Our vineyards are closed ecosystems, living space for our sheeps, poultry and bees, also all other visitors are welcome  to  roam free , even the birds are given sanctuary-given that they feed on the pests, they too are a part of well functioning habitat. And the vines are not only plants, but they are growing together with a lot of fruit, forest trees and herbs, which gives food and shelter to the animals, for us the preparates for farming. We trust the Nature to know the right way, but we listen to her needs, and help her along. Our vineyards are full of life, and so is our grapes-the essence of which is retained in our wines.

La vinification

The harvest in our farm is manual. All the grapes are macerated with exception of botryitis, after the press the wines maturing minimun 2 years in wooden barrels. Into the cellar we work according to cosmic rhythms. With botteling the wines we do not use pumps, just gravity. In all vinification period we do not use anything like sulfites, yeasts, ... 

Les vins

Moon Drops 2017 - White Wine in Clay
It is very special complex white wine, yellow gold color, biodynamicaly approached like our all other wines, from 7 different grape varieties (Chardonnay, Muscat, Rheinriesling, Pinot Gris, Traminer, Sauvignon and Riesling Italico), appearing in12 different harvests, also grapes with some botritis, which were not macerated, all others were macerated about 3 days togerther with seeds and skins. All those wines were vinificated separatly and in 1 to 2 years composed together. Wine was naturaly fermentated, no added yeasts or other enological substances, and it is unfiltered, 2 years aged in oak barrels, with no added sulfites, layed on fine sediments, with up to 13 % vol of alcohol. Sent is discreetly fruity and herbal. It has gentile taste of butter, yeast and rusk, as a result of its secundary fermentation. With our biodynamical and special treathments wine is live and full of energie, like all the rest. Botlled in clay and covered with home made wax.
Special characteristic of grapes selected for this couvée: grapes were harvested from slightly depresion area of wich is in the mornings and evenings gently covered with fog, so keeping moisture in it, favorable for developement of noble rot.  Becouse in this case four elements are tend in benefit of the water element, we name this wine Moon Drops – drops from the Moon.
Sun Drops 2017 – Orange Wine in Clay
It is very special white organic wine, raised by biodynamical approach. It is combination of 3 different grape varieties; Traminer 45%, Sauvignon 45% and Rheinriesling 10%. Macerated more than one month with seeds and skins. It was natural fermentated and aged in oak barrels, no added yeasts or any enological substances, with no added sulfites, with up to 13°vol of alcohol. Its typical sent is enriched by herbs and spices, as is confirmed by taste; it is herbal, fruity, by citrus and very fresh. It has very rich, full amber – gold colour. With our natural treatment, knowladge and good relationship to mother nature, we created and captured drops of the Sun – drops of life in it. Wine is full of vitality. Botlled in clay, covered with home made wax.
Special characteristic of grapes selected for this couvée: was harvested from area highly exposed to the sun. For this couvée we select varieties with a lot of green-leaf surfaces, with extreme possibility of solar absorbtion Becouse in this case four elements are tend in benefit of the fire element, we name this wine Sun Drops – drops from the Sun.
Pinot Gris 2015 – Orange Wine
Very tender light wine, has intensive amber color with brick shade as a result of longer maceration. 2/3 grapes are coming from the most humous soil on our farm, from which it draws great vitality, and 1/3 grows on terrarossa soil, from where it comes so much vairety and intensity. Taste is fruity, slightly bitter, with citrus character. It was macerated  14 days with seeds and skins, has been natural fermented, no added yeasts or other enological substances, and it is unfiltered. Wine was 2 years aged in oak barrels, with no added sulfites, layed on fine sediments, with 11,5 % vol alcohol. Like all our wines is vital - LIFE.
Pinot Gris 2017– Orange Wine
White wine with very intensive terracota – brick color, as a result of longer maceration. 2/3 grapes are coming from the most humous soil on our farm, from which it draws great vitality, and 1/3 grows on terrarossa soil, from where it comes so much vairety and intensity. Taste is fruity fresh, slightly bitter, with very bright character (stil developing). Smell is gentile, beside fruit also buttery (malolactic). It was macerated 14 days with seeds and skins, has been natural fermented, with no added yeasts or other enological substances, and it is unfiltered. Wine is 2 years aged in oak barrels, with no added sulfites, layed on fine sediments, with 12,7 % vol alcohol. Like all our wines is vital - LIFE.
